Known by several spellings, these celebratory cream rolls combine a crisp baked shell with a soft, sweet filling.
Ingredients
- 1 kg plain flour
- 2 eggs
- 1 cup neutral oil
- Fresh yeast
- Whipped cream
- Icing sugar
- Ground pistachios
- Ground cardamom
Method
- Mix the eggs, oil, yeast and flour into a soft dough. Add a little water only if needed.
- Cover and rest for about 30 minutes, then divide into manageable pieces.
- Roll the dough very thin and cut it into strips about 3 cm wide.
- Wrap each strip around a clean metal cream-horn mould, overlapping the edges slightly.
- Bake until firm and lightly golden. Allow the shells to cool before removing the moulds.
- Fill with whipped cream and finish with icing sugar, pistachio and cardamom.
Understanding the dish
Afghan cream rolls are a bakery-style sweet found at celebrations, tea tables and pastry shops. Their appeal comes from the contrast between a crisp hollow shell and a light filling. Spellings such as cream roll, crim roll and kirimrol reflect the way the name has travelled between languages. Home versions may use yeasted dough or laminated pastry, while the finishing flavours—cardamom, pistachio and sugar—place them comfortably beside other Afghan sweets.
Technique and texture
Roll the dough evenly so every strip bakes at the same rate. Metal cream-horn moulds should be lightly greased, and the strips should overlap just enough to prevent gaps without creating heavy ridges. Place the seam underneath on the tray. Let the baked shells cool completely before removing the moulds and adding cream; warmth will melt the filling and soften the pastry. Whip the cream only to firm peaks, because overwhipped cream becomes grainy and difficult to pipe.
Serving ideas
Fill the shells shortly before serving for the best texture. Dip the open ends in chopped pistachio or dust the whole roll lightly with icing sugar and cardamom. Unsweetened tea balances the richness. For variation, flavour the cream with rosewater or vanilla, but use either sparingly so cardamom and pistachio remain clear.
Planning and storage
Unfilled shells can be kept in an airtight container for several days if the room is cool and dry. If they lose crispness, refresh them briefly in a low oven and cool again before filling. Filled rolls must be refrigerated and are best eaten the same day. Never use improvised cardboard, painted metal or ordinary aluminium objects as baking moulds; use equipment specifically sold as food-safe and oven-safe. Cool metal moulds completely before storing them so trapped moisture cannot encourage rust.
